Ingredients for four people:
8 medium sized Italian sausages
Two cups dried lentils, boiled and set aside (takes about 20-25 minutes)
Olive Oil
1 small can chopped tomatoes
half cup white wine
1 chopped onion
2 cloves garlic, smashed
1 small chile pepper or peperoncino, chopped
salt and pepper
Lightly grease a large, deep skillet with olive oil. Sautee the sausage until they are brown on all sides. Remove them from the pan. In the same pan (with the drippings in there), saute the garlic (smashed) and the onion. When the onions are transparent, add the white wine. Let the wine reduce and add the tomatoes and the chopped peperoncino. Let the ingredients simmer together for five minutes on a low heat and add the sausages back in. Add the lentils and let the entire dish cook for another 20-25 minutes.
I served with parsley potatoes, which worked well.

I have become very attracted to rustic foods, heavier sauces, and whole grains recently. You're right that my leaning probably is an innate response to the times.
I'm making up a list as we speak to order from New York's largest online deliver service FreshDirect. I had placed red lentils in my cart, but will most likely swap them for green French lentils. They'll look better in this hearty recipe.

This looks perfect for the cold weather. It just so happens that I need to make a meal this week to take to some friends of mine who have had a rough two weeks with a family emergency. This should be great for them! Printing it out now...
Michelle, to reheat it you might just want to add some water, little at a time to it.
I love these kind of meals. Lydia, I am into whole grains right now too, they make me feel I am doing something for my body that is healthy.
